Using Collagen Middles
Soak in a salt water solution for 3-5 minutes (1 gallon of water to 1 cup of salt).
Clip or tie casings.
Place in smokehouse according to manufacturer’s recommended cycle.
Take out of smokehouse and place in cold water for 20 minutes.

Using Collagen Rounds
