Using Cellulose

1. Cellulose casings can be used directly without preconditioning.

2. Place cellulose on horn with tapered end toward stuffer (non-tapered end is filled first).

3. Fill to recommended diameter.

4. Tie off links with string.

5. In the smoker with damper open, cook sausage at 140-145°F for the first 30-45 minutes with smoke on (add soaked sawdust/chips).

6. Raise the smoker temperature to 160-165°F, close the damper halfway with smoke still on and cook at 30% humidity for 1.5 hours.

7. Raise the smoker temperature to 180°F, close the damper, remove smoke and add steam (water in pan) and cook until the internal temperature is 160°F.

8. Shower or bathe sausage in cold water for 20 minutes.

9. Remove cellulose casing by scoring the cellulose casing down the length of the sausage and peel the sausage.

10. Store unused cellulose in closed bag and keep in cool dry place.
