Fresh Collagen
Fresh, Processed/Smokable, and Snack Stick casings are ready to use without
pre-soaking or cleaning.
Fresh Breakfast Sausage Recipe
25 lbs. fresh pork trimmings
⅔ cup salt
¼ cup brown sugar
½ cup trehalose (antioxidant)
5 tbsp. rubbed sage
2-½ tsp. ginger
2-½ tbsp. nutmeg
2-½ tbsp. thyme
1 tbsp. crushed red pepper
Grind pork through ³⁄₁₆ grinder plate.
Mix in spices only until mixed consistently throughout – do not over mix or regrind!
Stuff into ICR’s UF casings (usually UF-20 to UF-26 sized) and link.

Using ICR’s Processed Smokable Sausage Casings
ICR’s processed sausage casings are ready to use.
They do not require soaking.
Simply open the box and put our shirred strands on your stuffing horn in the direction indicated on the box.
Link or string tie the casing to achieve desired sausage length, hang in smoker and smoke. Store ICR’s casings in a cool, dry location.
Keep the casings sealed until use and reseal any remaining casings after use.

Snack Stick Collagen
Snack Stick Instructions
25 lbs. fresh pork or beef Seasoning Salt Grind the meat, mix in seasoning and salt, and let sit overnight.
Stuff straight out or run on a twist linker.
If stuffing straight out and hanging in a smokehouse, press the casing down to the smoke stick on top to keep from breaking during cooking.
Dry in smoker at 150°F for 1 hour.
Smoke at 165°F for 1.5 to 2 hours.
Finish at 180°F with steam until the internal temperature is 155 to 160°F.
Cool in cold water for 5 minutes.
